Growing up in a Mexican household, we’d run out of toilet paper before we’d run out of frijoles – no joke!
Pinto, Lentil, and Black beans could easily be found in a giant pot on the stove, if not frozen for later.
But Garbanzo Beans aka Chickpeas were a bit harder to come by; something I absolutely looked forward to pouring all over my salad at the local pizza joint we went to every Friday night, Red West Pizza 🙂
Back then I had no idea what the heck I was eating. All I knew was I reaaally enjoyed those little round thingies in my salad… Now that I think about it, that was probably the only time I ever ate a salad. Moving on.
Over the years I’ve grown a little wiser, so it’s safe to say that today I use chickpeas in all sorts of dishes – salads, homemade hummus, fresh chickpea flour, stews, ethnic dishes, down to super yummy protein filled snacks.
I really do LOVE chickpeas! This is why I am sharing some of my absolute favorite recipes that call for this stellar legume – plus they are good for you and your wallet!!
Not only that, what’s great about the recipes shared below is you can easily bulk cook chickpeas in advance and store in the fridge to toss in to any dish in a hungry heartbeat!
